Last weekend they had a potluck at the Farm. Everyone that participates in the CSA was invited to bring a dish and enjoy a yummy meal together. Each person put the recipe next to their dish. One super delicious dish that Mrs. Tangerini made was a sweet potato casserole. I attempted to recreate it this evening with fresh sweet potatoes from the farm!
Ingredients:
3 medium sweet potatoes
3 Tbsp butter
1/2 cup brown sugar
1/2 teaspoon of cinnamon
Sea Salt (to taste)
1/2 cup pecans
Directions:
Wash, peel, cut into small piece, and steam sweet potatoes.
Preheat oven to 350 degrees.
Mash sweet potatoes in a casserole dish.
Add butter, brown sugar, cinnamon, and salt. Whip all ingredients together.
Sprinkle pecans on top.
Cover and cook at 350 for an hour.
