This evening we found a recipe on pinterest to use some of our yummy CSA produce. Here's the recipe we used.
Ingredients:
2 sweet potatoes
1 cup red kidney beans
1/2 cup of cheddar cheese
2 cups fresh arugula
1 table spoon of olive oil
half a lemon, juiced (we skipped this because we didn't have this on hand)
4 eggs - poached
salt & pepper
Directions:
Preheat oven to 350 degrees F. Poke sweet potatoes with a fork, wrap in foil, place on baking sheet. Bake for an hour (or until potatoes are soft - we ended up cooking them for an hour and a half)
Remove potatoes and let cool. Slice down the center of the potato, push the skin open. Stuff each potato with cheddar cheese, top with beans. Seal up tin foil and let cheese melt.
Poach your eggs.
Season arugula with olive oil and lemon juice, then add a sprinkle of fresh ground sea salt and pepper. Add it on top of the beans, then add the poached eggs.
