Today school was cancelled for mom, so Naomi and I stayed home and played. One thing we did together was bake 'cookies.' Now I put cookies in quotes because well, they're not your typical cookies. There is no flour, sugar or eggs in them. I wanted to make something that I didn't mind Naomi eating so here is the cookie recipe we used. It is loosely based off of this recipe, but I had to make adjustments for what we had in the pantry!
Oatmeal, Raisin, Coconut, Peanut butter & Chia Seed Cookies
Ingredients (Wet)
2 Tbsp peanut butter
3/4 cup applesauce
1 tsp vanilla
Directions
Step 1: Combine the dry ingredients in a bowl and set aside.
Step 2: Place the peanut butter, applesauce, vanilla in a bowl and hand mix. Blend until smooth, then add to the dry ingredients and mix well.
Step 3: Form cookies on a baking sheet lightly sprayed with oil or covered with parchment paper (I used parchment paper because the cleanup is way easier!). Use about 1 Tbsp of batter for each cookie, and spread the cookie out on the parchment. The cookies won’t spread as they bake so be sure to spread them out into a “cookie shape” using a fork or spoon, or your clean hands!
Step 4: Bake at very low heat: 200 degrees for 1.5 to 2 hours. When they’re done, they’ll be slightly browned and crispy on the outside.

So the cookies came out kinda dense and dry, because I took out a bunch of the liquid or wet ingredients as I didn't have them on hand. I think if I were to do it again, which I will, I'd add double the apple sauce. But they're pretty good, more like granola bars, but yummy none the less.
